Our Parmigiano-Reggiano from Brown Breed Cows, seasoned 30 months, is produced in the area between the provinces of Parma and Reggio Emilia, according to production rules which provide for a process completely done by hand.

Taste
Parmigiano-Reggiano from Brown Breed Cows is friable, soft, it has an intense flavour, full and unmistakable. During the first maturation (24 months), it reveals the goodness of the fat component of milk through a nice creamy and delicate flavour. In the more seasoned version the creaminess diminishes, leaving room for a more advanced and sapid taste.
Production
Parmigiano-Reggiano is a completely natural cheese, famous worldwide for its method of production and its nutritional and organoleptic characteristics which make it a PDO or Protected Designation of Origin cheese.
The processing of Parmigiano-Reggiano is regulated by strict standards of production, registered with the competent bodies of the European Union: the main feature of Parmigiano-Reggiano is the use of raw milk, absolutely not subjected to heat treatment, as well as totally free from any preservative.
The ripening of Parmigiano-Reggiano cheese cannot be less than 12 months , which are necessary to obtain, after an appropriate selection, the PDO designation; however its features are best taken with a seasoning of at least 2 years.
Preservation
Parmigiano-Reggiano from Brow Breed Cows can be stored at room temperature during the coldest months, while it is preferable to keep it in the refrigerator during the rest of the year. In any case, the storage temperature of Parmigiano-Reggiano should never exceed 10 C°.
