The Coppa is very suitable for aperitifs and starters with a glass of aromatic good white wine (ex: Franciacorta Brut, Gewurztraminer, Pinot grigio) and for a whole meal, together with mixed croutons and vegetable patés.

Details

Keep in a fresh, humid place (better in a cellar) and once opened keep refrigerated wrapped up in a dampened cotton cloth.

 
A SHORT COPPA DESCRIPTION:
The Coppa is obtained from the pork's muscle "longissimus dorsi", is manually trimmed and salted (with herbs and pepper too), then covered with the pork's bowel and manually lashed.
The seasoning takes place naturally in the open air of green Parmesan hills until this salume is ready to be tasted (seasoning at least 3 months).
