Organic Genovese Pesto with PDO basil, but without garlic.
Since 1972 Sommariva has followed the method of organic farming also for the basil production, to mantain healthiest its cultivation and the strong and typical aroma unvaried in time , to get then an intense and really unique Pesto.


 

Details

The basil cultivation takes place in heated glass houses (minimum temperature 18°C). The plants are harvested with at least two top tender leaves, to conserve the aroma. The production of the real typical Pesto Genovese is regulated by the Board Basilico Genovese P.D.O.; the seeds used must be Ocimum Basilicum (ecotype or autochthon selection). Basil should have definite characteristics in height, density of leafage, shape of the leaves, total absence of mint flavour, and so on.
The processing starts after the basil harvest; the leaves are delicately and accurately washed. Then, within few hours, pine nuts, extra virgin olive oil, salt and Parmigiano Reggiano P.D.O. are added, to create a Pesto of unique taste, which has been granted awards like 'Basilico d'oro 1995' and the trade name 'Vero tipico Pesto Genovese' by the Genoa association ' Ordine dei Cavalieri della Confraternita del Pesto'.
